With limited ingredients this recipe goes wonderful with tea time snacks for kids or elders or as a side dish in lunch or dinner. This suji idli recipe in season goes well with any chutney like green chutney of coriander, red of tomatoes, garlic peanut or white chutney of coconut. For batter making:-
Semolina/suji/ – 1 cup
Rice flour – 2 tbsp
water – 1 cup
Curd – 1/4 cup + 1 tbsp
salt to taste or – 1/2 tsp
eno fruit salt – 1 sachet
Rice flour/chawal ka aata – 2 tbsp (if available)
Green chills chopped – 2 to 3
chana dal – 1 tsp
udad dal – 1 tsp
mustard seeds – 1 tsp
cashews – 2 tbsp
Ginger grated – 1 tsp
Asafoetida – 1/3 tsp
Oil – 1 tbsp

vital Tips :-

Rice flour is an optional ingredient. if you have you can add this.

Keep aside the batter after adding curd and water for 10 minutes.

cool down idlis for 5 minutes than demold them, will turn out superbly.
If you want to store this batter you can put it in the fridge for a day. Remember do not add eno and salt. While you are going to boil idlis you can add.
