Gujarati Handvo Recipe Details:
Handvo is traditional healthy Gujarati cuisine made with different kinds of lentil and rice.it is a lentil vegetable mixed savoury cake. It is often prepared with vegetables like bottle gourd, carrot, sweet corn, green beans, coriander leaves, capsicum, and some essential species. This nutritiously rich breakfast dish is usually enjoyed in all seasons. Handvo recipe video shows how to make tasty and spicy handvo at home. It is cooked Gujarati breakfast and dinner dish.
Different dal and rice make it more nutritious and healthy. These vegetables are very delicious as well as nutritious and filled with protein and fiber. Serve hot Gujarati traditional dal chawal handvo as a lunch or dinner with green chutney or curd. Handvo can be made using handvo cooker, microwave oven, OTG, instant pot, tawa or kadai. I made it today in non-stick tawa. Handvo is crisp from outside and soft from inside. You can prepare handvo as traveling food too. It can be done in two ways instant semolina/suji/rawa handvo or fermented handvo. If you use non-stick pan/tawa or kadai it requires less oil.

Servings: 2 to 4 persons
Preparation & cooking time – 30 minutes
For handvo soaking:-
Any small rice – 1.5 cup
Chana dal(yellow split peas) – 1/2 cup
Toor dal (pigeon peas) – 2 tbsp.
Urad dal – 1 tbsp.
Curd ¼ in each round total ½ cup
water – 1/4 cup in each round
For batter making:-
Grated bottle guard – 1 cup
Grated carrot – 1/2 cup
Boiled corn – 1/3 cup
Boiled green peas or frozen – 1/4 cup
Chopped capsicum – 1/4 cup
Finely chopped, washed coriander leaves – 1/4 cup
Ginger, green chili paste – 1 tsp. (add garlic if you want)
Asafoetida – a pinch
Turmeric powder – 1/4 tsp.
Salt to taste
Sugar – 1/2 tsp. (optional)
Eno fruit salt blue – 1/4 tsp.
Water – (if required) 1 to 2 tbsp.
For handvo tempering/tadka :-
Oil – 2 tbsp.
Sesame seeds – 1 tsp.
Mustard seeds – 1 tsp.
Curry leaves some fresh
Asafoetida – a pinch
Cook handvo on low to medium flame only, otherwise it will burn.
It can be served as a kid’s lunch box recipe, lunch or as dinner also as it has nutritious value too. Serve it with rice, roti or curd/buttermilk with papad.
If you are Jain or swami Narayan, avoid adding onion or garlic.
Use fresh and tender vegetables for better result.
