Fresh turmeric pickle (raw turmeric pickle), a popular North Indian salty and tangy achar will surely loved by all. This Turmeric pickle can be served with roti, paratha or any Indian bread. It may also enhance your rice recipe’s taste. Gujarati, Rajasthani and Marathi people make and serve this achar with their day to day meals in the winter season. Fresh turmeric comes in winter season only. Turmeric pickle has so many health benefits hence everyone should eat this pickle in the winter season. You can say that it is No cook-No mess recipe except heating up an oil.

Preparation time: 20 minutes

Storage Instructions:
– This fresh turmeric (mango ginger) pickle can be stored up to 1 month in the refrigerator.
– Properly close the lid of the container and place it in the fridge.
– Always use sterilized and totally dry containers to store any pickle, it will enhance the life of pickle.
– Pour all leftover spices and oil over the turmeric.
– The taste of pickle will be more delicious after 2 to 3 days.

Ingredients:

– Green chilies (spicy) – 10 to 12 or 250 grams (Washed & dried)
– Mustard oil – ½ cup
– Yellow fresh turmeric – 200 grams
– White turmeric/mango ginger/ – 200 grams
– Lemon juice – 5 to 6 big sized lemons or you may use vinegar(1 tbsp.) for enhancing the shelf life of the pickle
– Mustard seeds coarsely grinded (Rai na kuriya in Gujarati) – 3 tbsp. outer layer
– Fenugreek seeds coarsely grinded (Methi na kuriya in Gujarati) -2 tbsp. inner layer
– Salt – 2 tbsp. or to taste
– Asafoetida – ½ Tsp.
– Any cooking Oil – 1 cup (I used mustard oil)

Fresh Turmeric Recipe Details (kacchi haldi ka achar banana ki vidhi, kacchi haldi ka achar banana kaa tarika):

– Wash fresh (yellow) and mango ginger (white haldi) properly and let them dry. Both haldi must be completely dry before you prepare the pickle.
– Coarsely grind masala like fennel seeds, black pepper, and carom seeds.
