Undhiyu Recipe Details:

This popular and traditional Gujarati dish is prepared with so many fresh vegetables and dhokli muthiya. This deliciously rich curry is usually enjoyed in the winter season. Undhiyu recipe video shows how to make restaurant-style tasty and spicy Uttrayan special (Makar Sankranti special) undhiyu more deliciously. Undhiyu is served sometimes for bhog or Prasad during the winter festival season in Gujarat. This Prasad is usually served with jalebi or shrikhand and puri. These vegetables are very delicious as well as nutritious as filled with protein and fiber.

This dish is seasonal as vegetables that are only available in Gujarat during the winter season. Undhiyu is a variant that is served with poori in marriage and banquet. If you have a party planned at home then here is a step by step guide that will make you the star of the party. You would empty your baskets of praises by making this delicious dish. Servings: 4 to 5 persons

Preparation & cooking time – 30 minutes

Ingredients:
Potatoes – 6 to 8 small
Sweet potatoes – 1/3 cup
Elephant foot (suran) – 1/3 cup
Yam (ratalu) – 1/3 cup

Vegetables:
Surti papdi or regular papdi (Indian beans)- 1/3 cup
French beans – 1/3 cup
Cluster beans if available (guvar) – 1/3 cup
Fresh double beans (val) – 1/3 cup
Green peas – 1/3 cup
Fresh toor (pegion peas) – 1/3 cup
Brinjal small – 5 to 6 pieces
Tomatoes – 4 medium size (blend and make puree)

For green gravy:
Fresh coriander leaves – 1/3 cup or approx. 70 to100 gram
Spicy green chilli – 2
Fresh(green) garlic 2 tbsp or regular garlic cloves 7 to 10 if you want

For Stuffing:
Roasted chickpea flour – 1 tbsp.
Cumin coriander powder – 1 tsp.
Red chili powder 1/2 tsp.
Turmeric powder 1/2 tsp.
salt – a pinch
Sugar – 1/4 tsp.
Garam masala –1/4 tsp.
Oil – 1 tbsp.
For tempering:
· Oil – 1/2 cup
· Mustard seeds – 1 tbsp.
· Cumin seeds – 1/2 tsp.
· Carom seeds – 1/2 tsp.
· Bay leaf – 1
· Cinnamon stick – 2
· Dry red chili – 1
· Asafoetida – a pinch
· Turmeric powder – 1 tsp.
· Cumin coriander – 2 tsp.
· Red chili powder – 2 tsp.
· Garam masala – 1/4 tsp.
· Salt – to taste
· Sugar – 2 tsp.
· Methi muthiya/gota or methi balls – 8 to 10
· Water – 1 to 1/2 cup

For garnishing:
· Fresh coriander leaves
· Some grated coconut
– Cashews
Raisins (kishmish)

Vital Tips:

· If you want gravy in your curry you can add more water to it.
If you want to make undhiyu as Prasad recipe then avoid adding garlic.
· Use fresh vegetables for a better result.
While adding dry masala turn the flame on slow mode so it will not burn.
