Using multi grains is beneficial for your health too. You will empty your baskets of praises by making this delicious dish. This khichdo recipe is lip smacking and very healthy. A side dish that takes a big lead in the race of health is none other than this khichdo recipe.

Preparation time : 1 hour

Servings : 3 to 4 people

Ingredients:
Any small rice – 1/2 cup
Urad dal – 1 tbsp.
Yellow Mung (moong dal) – 1 tbsp.
Toor dal – 1 tbsp.
Chana dal – 1 tbsp.
Green Mung (moong dal) – 1 tbsp.
Masoor dal – 1 tbsp.

Water measurement:- 1/2 cup rice + 1/2 cup dal = 1 cup
3 times water :- 3 cups water

Broken wheat – 1/2 cup
Peanuts –1/4 cup
Green peas – 1/4 cup
Green beans – 1 tbsp.

Water measurement for boiling :- ½ cup broken wheat + ½ cup pulses = 1 cup
3 times water :- 3 cups water

For frying:-
Diced Potatoes – 2 medium sized
Onions – 1 cup (Julian cut)

For tempering:-

Oil – 1/4 cup
Ghee – 1/4 cup
Mustard seeds – 1 tsp.
Cumin seeds – 1 tsp.
Cloves – 5
Black pepper – 5 to 7
Star anise – 1 piece
Bay leaves – 2 pieces
Dry red chilies – 2 pieces
Asafetida – 1/2 tsp.
Finely chopped tomatoes – 1 cup or 3 big sized
Ginger and garlic paste – 2 tsp.
Some fresh Coriander leaves/cilantro
Mint leaves – 1/4 cup
Turmeric powder – 1 tsp.
Red chili powder – 2 tsp.
Garam masala powder – 2 tsp.
Salt to taste or 1.5 tsp.
Lemon juice – 1 tbsp. or 2 lemon’s juice
Water – 1/2 cup to cook

उबालने (boil) के लिए पानी का नाप हम तीन गुना रखेंगे आधा कप चावल और आधा कप सभी दाल मिलाके है तो टोटल १ कप का तीन गुना यानि ३ कप पानी हम पहले वाले कुकर मैं डालेंगे । धीमी आंच पर ५ से ६ विस्सल करेंगे |

दूसरेवाले कुकर मैं आधा कप ब्रोकन गेहू और आधा कप (मूंगफली के दाने,मटर और चोली ली है ) तो टोटल १ कप का तीन गिना यानि ३ कप पानी डालेंगे । धीमी आंच पर ५ से ६ विस्सल करेंगे |

Vital tips :-
– Soak all grains for minimum half an hour (30 to 45 minutes) before you start to make.
– You may soak ingredients in hot water too.
– Boil ingredients in two different cookers as shown in the recipe video.
– If you are Jain or Swaminarayan, you can make this recipe without onion garlic. You just need to add green chilies according to your taste.
– You may add 1 tsp. of sugar in it if you like little bit sweet khichdo.
– You can add and skip dal of your choice.
– You may add any vegetables of your choice in it.
