Masala idli fry is mildly spiced sauté dish made from idlis. Idlis are fried until they turn into light golden color and crispy. Afterward tossed in curry leaves and south Indian spices.

This fried masala idli goes well with any chutney like coriander green chutney, red tomato chutney, garlic peanut or white chutney of coconut. Fried idlis turn out crispy from the outer layer and spongy from the inside. The taste of sambhar masala makes it more delicious. You can make tasty fried idli using the leftover idlis at your breakfast or tea time. Even you can give it to your kids as lunch box recipe too.

Servings: 2 to 3 persons
Preparation & cooking time – 10 minutes

Ingredients:
Chopped idlis – 9 idlis
Oil – 2 tbsp.
Mustard seeds – 1/2 tsp.
Cumin seeds – 1/2 tsp.
Some fresh curry leaves
Asafoetida – a pinch
Salt to taste or 1/2 tsp.
Red chili powder – 1/2 tsp.
Raw mango powder – 1/2 tsp.
Sambhar masala powder – 1 tsp.
Sugar – 1/2 tsp. (optional)
Finely chopped Coriander leaves – 1/4 cup (optional)

Tips:
Fry idlis on low flame so that not will not burn and turns golden and crispy.
Stir idlis occasionally, you should lift your pan and stir it so that idli may not break by ladle.
You may add some onions in it if you want.
I have used dal-chawal idli. You may use suji/semolina/rawa idli as well.
