Batata vada is made with different styles in different places. Today I made it with some fresh coriander leaves, chickpea flour, grated ginger, green chilies and salt. With limited ingredients this recipe goes wonderful with tea time snacks for kids or elders or as a side dish in lunch or dinner. This aloo vada in monsoon or winter season goes well with any chutney like green chutney of coriander, red of tomatoes, garlic peanut or white chutney of coconut. It turns crispy from the outer layer and spongy from inside. The taste of coriander leaves make it more delicious as well as healthy. You can serve this pakoda in your guest function or get together, kitty party or potluck function. It has its own place on the menu.

You would empty your baskets of praises by making this delicious side dish. You can prepare this aloo vada/ pakoda within 30 minutes at home without taking anybody’s help. Ingredients:
For batter making:-

besan (chikpea flour) – 1 cup
water – 1/2 cup
Turmeric powder – 1/4 tsp
salt to taste – 1/2 tsp
baking soda – a pinch or ¼ tsp
Rice flour/chawal ka aata – 2 tbsp (if available)
Finely chopped Coriander leaves – ¼ cup
Boiled potato – 5 big size
Roasted peanut powder – 2 tbsp
Green chills chopped – 2 to 3
Ginger grated – 1 tsp
Asafoetida – a pinch
Salt to taste or 1 tsp
Oil – for frying

vital Tips :-

While you are going to add pakoda/vada in frying oil keep slow/low flame so that you may not burn.

After adding pakoras, turn your flame on medium mode.

Let pakodas turn fry from one side then turn the reverse side.

If you want to store this batter you can put it in the fridge for a day. Remember do not add eno and salt. While you are going to fry pakoras you can add.
